The parry weapon art is based off of a medium shield parry. As for the greatshield capability you would need to use a greatshield that allows you to use the weapon's WA. WebFarron greatsword is actually funny to use in PvP, if executed correctly. Performing full dancing move is pretty dangerous, to be fair, as skilled people can easily parry it (especially finishing frontflip-like attack), so I usually perform initial dancing move before using simple attack, if first one connected with enemy.
